One of my favorite recipes from an old friend is baked brie with caramelized onions. It is a simple yet elegant appetizer that always impresses guests with its rich and creamy texture and sweet and savory flavor, making for a delicious and decadent treat.

Ingredients:
1 | Bulb of garlic | 1 | (8 oz) Round of Brie or Camembert cheese |
¼ | Cup of butter | 1 | Sheet of frozen puff pastry, thawed |
1 | Vidalia onion, sliced | 1 | Tablespoon of melted butter |
1 | Granny Smith apple - peeled, cored and sliced | Garnish with cloves of roasted garlic, candied walnuts, or apple slices if desired |
Directions:
Preheat oven to 400° F. Place the garlic bulb on a foil-covered baking sheet and drizzle olive oil over garlic. Roast the garlic for 15 to 20 minutes or until soft. Let it rest.
In the meantime, melt ¼ cup of butter in a frying pan over medium heat. Cook and stir sliced onions and apples in butter until tender and browned. Let it rest.
Arrange brie on top of the thawed puff pastry. Place the apple and onion mixture over the top of the cheese. Fold puff pastry over the cheese, onions, and apples and pinch to seal pastry closed. Brush with melted butter.
Bake the pastry for roughly 20 to 25 minutes or until the pastry turns golden brown. Serve while warm. Garnish with cloves of roasted garlic.
