Trends. They are everywhere. Clothes. Makeup. TikTok videos. And yes, even food.

One of the biggest food trends lately is Birria. Birria tacos, birria nachos, birria ramen. Traditionally, Birria is made with goat meat or lamb, and it originated in Mexico. Lately, there have been new spins on birria using beef or chicken in the United States. Birria is a meat stew or soup marinated in spices like dried chiles, garlic, cumin, bay leaves, and thyme cooked in a broth with vinegar. Once it has cooked, the meal is drained and put into tacos, on top of nachos, or whatever other recipe. For tacos, the shell is stuffed with the meat, shredded cheese is added, then it goes on top of a hot griddle, and the marinated broth is ladled over the taco shell and fried until the cheese melts. Then, you can add other toppings of your choice. It is then served with a side of the marinated broth used with the meat. The broth on the side is used as a dip for the tacos.

Last year, I was lucky enough to try birria tacos from a local Mexican restaurant called Grace’s Pizza. They used fresh beef and then shredded it. The birria was added to hard taco shells, loaded with shredded mozzarella cheese, and fried on a hot griddle with the beef broth. I dipped my birria taco in the marinated broth, which was a flavor explosion. It was so delicious. The broth isn’t needed, but it really adds to the flavor. If you ever get a chance to try birria tacos, I highly recommend it.
